INGREDIENTS:

FOR MARINATION:

  • CHICKEN                                      1/2 KG
  • VINEGAR                                       2 TBSP
  • BLACK PEPPER                           1/2 TSP
  • TURMERIC POWDER                 1/2 TSP
  • SALT                                                TO TASTE 
FOR CHETTINAD MASALA:

  • CORIANDER SEEDS                      2 TSP
  • FENNEL SEEDS                               1 TSP
  • CUMIN SEEDS                                 1 TSP
  • STAR ANISE                                     1 PIECE 
  • GREEN CARDAMON                     2 PIECE 
  • CLOVES                                            4 PIECE
  • GARLIC CLOVES                           6
  • CINNAMON STICKS                      2
  • GINGER CHOPPED                        1 TSP
  • TAMARIND  PASTE                        1 TBSP
  • FRESH COCONUT GRATED        1/2 CUP
  • BAY LEAVES                                     3
  • DRY RED CHILLIS                          2
  • BLACK PEPPERCORNS                 2 TSP
FOR SEASONING:

  • OIL                                                      2 TBSP
  • CURRY LEAVES                              4
  •  ONION PASTE                                 2 TBSP                             
  • TOMATO PASTE                              1/2 CUP
  • SALT                                                   TO TASTE 
RECIPE:

  • ADD TO THE ALL MARINATED INGREDIENTS TO THE CHICKEN AND REST IT FOR 30 MINS.
  • NOW DRY ROAST THE ALL  DRY INGREDIENTS  FOR 5 MINS EXCEPT (GINGER, AND TAMARIND PASTE).
  • NOW ROAST THE GRATED COCONUT UNTIL ITS COLOR IS LIGHT BROWN.
  • NOW ADD ALL ROASTED INGREDIENTS AND GINGER AND TAMARIND ADD TO THE BLENDER AND BLEND THEM WELL
  • IN OIL ADD CURRY LEAVES AND FRIED ONION PASTE AND STIR FRY AND THEN ADD TOMATO PASTE AND SALT AND COOK IT FOR 5 MINS
  • NOW ADD MARINATED CHICKEN AND SAUTE FOR A FEW MINS.
  • THEN ADD CHETTINAD MASALA AND MIX IT WELL.
  • NOW ADD 1 CUP OF WATER AND COOK IT FOR 15 MINS UNTIL THE CHICKEN IS SOFT AND TENDER 
  • DELICIOUS CHETTINAD CHICKEN IS READY 
  • SERVE IT AND ENJOY IT.
