  • Red bell pepper, diced                     1
  • Red onion, diced                              1 medium
  •  Salt                                                  as needed
  •  Black pepper powder                        1/2 tsp
  • Eggs                                                   4
  •  Crumbled cotija cheese                      1/2 cup
  • Chopped fresh cilantro or( coriander)  1/2 cup
  • Hot sauce,                                             to taste

RECIPE:

  • Heat the olive oil in a skillet.
  • Add red bell peppers, onions, salt, and black pepper powder in oil and Cook for a few minutes, until softened.
  • Now, beat the eggs in a medium bowl.
