- Red onion, diced 1 medium
- Salt as needed
- Black pepper powder 1/2 tsp
- Eggs 4
- Crumbled cotija cheese 1/2 cup

RECIPE:
- Heat the olive oil in a skillet.
- Add red bell peppers, onions, salt, and black pepper powder in oil and Cook for a few minutes, until softened.
