INGREDIENTS:   

  •  Bananas, sliced, plus extra to serve   3    
  •  Eggs                                                      5
  • Coconut flour                                       2 tbsp
  • Baking powder                                     1/4 tsp
  • Cinnamon powder                             1/2 tsp
  •  Salt                                                        1/4 tsp or to taste
  • Oil and butter, to fry                           for fry
  • Organic maple syrup,                        to serve

RECIPE:
1. In a bowl, mash the bananas with a fork. Then add the eggs, coconut flour, baking powder, cinnamon, and salt. Combine.
2. Heat a bit of oil in a pan and add a tablespoon of batter. Fry for 1–2 minutes until one side is golden brown, then flip onto the other side. Add a knob of butter and fry for 30 seconds to a minute. Repeat until the batter is finished.
3. Stack the flapjacks on a plate and serve with banana slices and a drizzle of maple syrup.
