This is a pleasant weekend brunch or breakfast treat this is oh so scrumptious and first-rate quick to make. I like to serve it with maple syrup.
BANANA bread flapjacks are best for when you’re looking to cut out subtle sugar but still crave a scrumptious, candy-tasting breakfast. The mixture of bananas, eggs, and coconut flour will preserve you stuffed and satisfied without the sugar crash.

- Bananas, sliced, plus extra to serve 3
- Eggs 5
- Coconut flour 2 tbsp
- Baking powder 1/4 tsp
- Cinnamon powder 1/2 tsp
- Salt 1/4 tsp or to taste
- Oil and butter, to fry for fry
- Organic maple syrup, to serve
RECIPE:
1. In a bowl, mash the bananas with a fork. Then add the eggs, coconut flour, baking powder, cinnamon, and salt. Combine.
2. Heat a bit of oil in a pan and add a tablespoon of batter. Fry for 1–2 minutes until one side is golden brown, then flip onto the other side. Add a knob of butter and fry for 30 seconds to a minute. Repeat until the batter is finished.
3. Stack the flapjacks on a plate and serve with banana slices and a drizzle of maple syrup.
