INGREDIENTS:

  1. Chicken drumsticks                                         1 kg
  2.  Buttermilk                                              1 1/2 cups 
  3. Tabasco sauce                                       1 1/2 tbsp 
  4. Salt                                                         2  tsp
  5. Freshly ground black pepper,( divided into)     2 tbsp                                 
  6. Vegetable oil,                                                   for frying 
  7. All-purpose flour                                     2 cups
  8.  Cayenne pepper                                    1 tsp
RECIPE:

  • Pat the chicken with paper towels to dry.
  • In a large bowl, combine the buttermilk, Tabasco sauce, salt, and 1 tablespoon of black pepper. Add the chicken legs to the mixture and toss to coat. Cover and refrigerate for at least 1 hour or up to overnight.

  •  After marination, Remove the chicken from the buttermilk, letting any excess drip off.

  •  In a large, deep skillet, or sauté pan, heat the oil.

  •  At this point, in a large bowl, combine the flour, the remaining 1 tablespoon of black pepper, and the cayenne pepper. Coat the chicken legs in the seasoned flour, and shake off any excess.
